Chipotle Sauce

  • 1 tub of fat free sour cream
  • 1/4 or more skim milk
  • chipotle spice 
  • garlic powder
  • crushed red pepper
  • 1 or more limes
  • salt
I use this as a dipping sauce for Asparagus while on P2.  I also use this as a salad dressing.  You may use this for lots more after you taste it and realize how many calories it is.  I got this idea from Red Robin.  My hubby and I love the chipotle sauce there.  We used to be little porkers dipping our frys into tiny silver buckets of it.  LOL!!!!  Now we rarely eat out and I look forward to cooking at home now.

If your tub has enough extra room in it you can mix in container if not use a bowl.  I squeeze juice of 1 lime if its big and juicy if not I use lots of limes till I get at least a quarter cup of lime juice in my bowl then I add approximately 2 tablespoons of chipotle spice.  I like it pretty spicy so if its not hot enough I keep sprinkling it in.  Then add garlic powder.  I use about a tablespoon maybe more garlic.  Add approx 1-2 tablespoons crushed red pepper.  I use lots of salt so start with a tsp mix and add more if you need to.  I thin this mixture down with about 1/4 cup of milk to stretch it and reduce the amount of calories consumed.
