This little inspiration came to me after a Pinterest search in the hopes of finding something healthy and filling to eat that won't kill me. Ha, good luck, right? Well, luckily I was able to whip up a much healthier version of this comfort food than what I found online.
This is pretty easy to make and you can store your leftovers for up to a week in the fridge. Which makes this great for lunches on the go or at work when everyone else is killing themselves with french fries again.
