Low Calorie Low Carb Healthy Zucchini Noodles

Healthy Spaghetti Alternative Zucchini Noodles and Organic Tomato Meat Sauce


If you are following Dr. Simeons 500 calorie protocol then you must be really hungry.  You may want to eat more, pronto.  There is no need to suffer while on the HCG diet or any diet for that matter.  Hopefully you can make your time on the HCG diet comfortable enough for yourself that you can actually turn this into a lifestyle change and not only lose weight now but, keep it off and live longer too.

Most people seem to be very successful at a min of 4 ounces of protein per meal.  If that doesnt satisfy your hunger along with lots of veggies then increase your protein by 1 or 2 ounces.  Still hungry?  Then you need to eat more vegetables.  Don't go crazy but satisfy your hunger.

This recipe is so good you might forget you are eating zucchini noodles.


There are lots of ways we could make the sauce but for the sake working busy people with not much time on their hands we are going to make this a little more convenient.


  • 1 large can of organic crushed tomatoes
  • 1 red pepper diced
  • 1 lb hamburger meat
  • 1 tablespoon oregano
  • 1 teaspoon garlic powder
  • 1 onion chopped
  • 1-2 large zucchini 
  • 1/4 C red wine
  • salt and pepper to taste
  • grated pecorino 

Brown hamburger in pan.  Add onions and red peppers while meat is browning on medium heat.  Season with salt, pepper, garlic, oregano.  Once meat is brown and onions have become translucent add tomatoes, wine, more oregano, garlic powder, salt and pepper to your desired taste.  You may opt to use more or less wine or none at all.  Bring mixture to slight boil then reduce heat to medium and  cook slowly until tomatoes are heated through.  Use the pecorino as a garnish which is very low in calories but also high in taste and health benefits.  Pecorino is known to aid digestion and contains high levels of CLA which can aid in fat loss even while on the restricted HCG Diet.

Heat zucchini in non stick pan with a couple tablespoons of the tomato sauce.  The zucchini is so thin that you just need to toss it in the pan 1-2 minutes on medium heat enough to warm it up. 



How do you get the zucchini into thin spirals? Try one of these veggie spiral makers.  I tried the Veggetti first but it didnt hold up that well and only works for small zucchini.  Try the Spiralizer if you are going to make this dish often.
