In this recipe we are frying chicken breast coated in almond flour and fried in coconut oil First you will want to get chicken breast that is free of hormones and or preservatives. This choice is becoming such a popular one that even Walmart is carrying this type of chicken so it should be very easy for you to find.
The reason we want our meats to be free of hormones and preservatives is that while we are on the HCG Diet we are eating clean, resetting our hypothalamus, and ridding our body of these damaging toxins that can hinder our bodies natural functions.
Coconut oil is used safely on the HCG Diet because it is comprised of medium chain triglycerides otherwise known as MCT oil which is used for energy and not stored in the body as fat.
What you will need:
chicken breast
almond flour
coconut oil
garlic
salt and pepper
optional white wine
Put a couple tablespoons of coconut oil in your pan on medium. Put approximately 1/2 C to 1C almond flour in a plastic bag. Add desired spices to bag. I use garlic powder, a little cayenne, paprika, poultry seasoning sometimes, etc. Add chicken to bag and shake until chicken is well coated.
Add chicken to pan. Cook approximately 6-10 minutes each side depending on size of breast.
Optional add a few splashes of white wine once the chicken has browned both sides and continue cooking till wine is almost gone turning the chicken and coating it with the wine sauce.
Add your chicken to your favorite salad or pair with your favorite vegetables.
