Mexican Frittata


  • 1 tsp coconut oil
  • 1 medium onion
  • 1 garlic clove
  • 1-2 cups spinach
  • 1/2 cup egg beaters
  • 3 oz or less taco meat
This is an awesome Frittata that I often eat twice a day.  I have good losses each time I eat this.  You are so gonna thank me after you taste this!




Sautee onion and garlic in coconut oil.  Add lots of spinach, taco meat, and cover till wilted usually 2 minuts on low heat.    Stirring a couple times till meat is mixed in.  Now add 1/2 C egg beaters evenly to the pan cover set on low heat around 3 out of 10  and set timer for 3 minutes.  Every stove is different you may have to cover and cook for 2 more minutes if not firm on the tip.  Top with some of chipotle sauce
