HCG Chicken Frittata Italian Style


This is a little twist on the Mexican Frittata that I love.  I like to have this one for a change every now and then.

I just saute my onions then add spinach and let that cooked covered till wilted then I add a couple ounces of chicken breast.  I get it sliced with no preservatives and no hormones from costco so its quick and easy.  Heat that up then add a few dashes of oregano, tarragon, salt, and fresh cracked pepper toss it around then add 1/2 cup of egg beaters cover and cook till egg is not runny.  Sometimes I add up to one ounce of cheese.  Thats up to you if you can afford the calories on this day.
